the imitation queen!

So again, my 4 year old niece makes the blog by imitating ! haha she starts off by imitating my dad as she "reads the newspaper"

haha, she's quite the little comedian

More good news!.. :-)
I recently got hire as a substitute teacher for children who are deaf and hard of hearing... so exciting! So i'll be working at an elementary school right by BSU. The kids are all so cute and really sweet. Plus I'm excited to be using more sign language! And for those who don't know, I am on the way to becoming fluent in sign language :-) t's a beautiful language and so far, it's been my favorite 2nd language to learn and the easiest to pick up. Not only are you watching someone make the signs, but your hearing what word it means and you're also practicing along, making your own hand shapes. So I think that's why it's so much easier for me to pick up on ASL, it's actually an interactive language Anyways, for anyone who is interested in taking sign language, I strongly encourage it!

"I not impressed".

Hey everyone! So I have a ton of catching up to do, but I've been busy with school and what not. Hopefully I'll get things sorted out quickly so I can write more often. In the meantime, here's what you missed!

I wasn't even planning on blogging about this, but I like the pictures and my niece made me laugh (like always)
I won an award for making the Dean's List this past Fall semester (since I transferred schools and it was my first semester there). So I got to go to this award ceremony, you know, fancy stuff. My mom and grandma came to support me and afterwards we took a couple pictures.

Me and Mumma and my "Excellence" award

Me, looking all pale and 'ish

Grandma and me

So now on to the funny stuff. The next day after getting my award, I was hanging out at home with my neice Ryleigh, who I've mentioned before in posts. But in case anyone is unfamiliar with her, she is a 4yr old going on 25 and she just tells it how it is. So we're sitting at the dining room table and the conversation went like this:
Me: Hey Ryleigh, wanna see the award I got?
Ry: Yeah!
Me: (Pick up the award and open it so she could see)
Ry: (Looks at it for about 5 seconds and then makes a face)
Then, without missing a beat she looks at me and says, "I not impressed". HA! I was so shocked but it was SOO funny the way she said it . :-) 4 yr olds really know how to boost ones self esteem ;-)

Ryleigh thinks she's hilarious :-D

Anyways, more stuff I failed to tell you guys! As I was MIA for like a week here's what else happened:

One of my very best friends, Keri's baby turned ONE! I can't believe it's been a year already since baby Kaedyn came into this world. She's so much fun and is healthy and running around like crazy! Time flies, it makes me excited for my future to hopefully have children someday, but at the same time watching Keri give birth a year ago was also a good form of birth control for me!

                                                                "I'm ready for cake!"

As soon  as she came home from the hospital :-)

hehe, chubby cheeks!

And more good news..... spring is COMING! :-)

ehh, while kind of? I was SO excited to see grass today!
haha how pathetic? it's more like mud :-D
Unfortunetly, Boston is suppose to get more snow Monday so I'm pretty bummed :-/

But, on a brighter note I went grocery shopping today and got some yummy stuff! First let me show you what I had for lunch today :-D

Ezekial bread... sooo good! But I think the seaseme kind is my favorite

Okay, don't knock it 'till you try it, but it's tuna mixed with mustard, avocado and spinach!

holy sandwich, yummm

So i have to tell you about this amazingggg peanut butta I got at the store today too!

Need I say more? I ate some right out of the jar, it's that good.
I loved it because it didn't have the oil sitting on top like all of the other pb's I eat haha
And it's still healthy for you, horray!

And look at what else I grabbed on the way out...

Veggie Rolls!
I'm not one for sushi, so these are awesome!
As soon as I got in the car I had to eat a few on the way home, so yummy!

Hope everyone enjoys the rest of their weekend! See ya!

Birthday Bowling!

So today was pretty fun (besides having to work tonight!). Today was my nephew Ralphies 7th birthday party. I can't believe he's 7! Crazy! It was a lot of fun though because we went Cosmic bowling! And there was an arcade and everything, so of course all of the little kids loved it! And I realized after the party was over that I didn't take many good pictures and I wasn't in any! I was having too much fun bowling with everyone and playing games, that I forgot to snap more pictures! woops!

This is my cousin Alyssa being crazy and spinning on the floor! haha

Alyssa again and my cousin Ryan

Alyssa and my niece Ryleigh, you know just casual 4 yr-old girl talk!

The birthday boy Ralphie! He's quite the little dancer ;-)

haha my brother is going to kill me for this one! But anyways, my older brother Eric bowling with Alyssa and Ryleigh!

Candid? lol

Time for CAKE!

My cousins Andrew and Collin!

Again, the two boys, and Collin's crazy hat he won from the tickets in the arcade!

Enjoy this little video! It's everyone singing happy birthday to Ralphie :-) I know it's dark, but if you really look you can see Ralphie's personality COMPLETELY. haha, he's such a goofball!

Hope everyone enjoys the rest of their weekend! I'll be waitressing again tomorrow night, unfortunetly! (BTW, anyone notice how LATE i'm blogging!?) haha night!

I have a lot of catching up to do! & a recipe to share!

So, lately I've been learning my lesson with "cheating". And I mean cheat meals and foods, of course. I've slowly but surely come to the realization that my problem isn't clean eating, it's SNACKING. gahhhhh. I snack too much, plain and simple. I've also come to the realization that if man made it, then I shouldn't be eating it. Even if it's those delicious kids Z bars that I love so much :-D. Another problem that I am trying to attack is portion size. I know that this plays a HUGE part in eating clean, so for example today for breakfast instead of making 3 protein pancakes, I only made 1, and I was actually satisfied. Another tip I am trying to follow for my own sake is eating slower. Ever notice that the skinny minnie's all eat super slow? So does anyone else have any tips for eating clean or cutting out extra calories?

&  Since I haven't really had the chance to post some of my meals, here they are!

Brussel sprouts, baked with extra virgin olive oil, green beans, and ground turkey
Morning Star chicken patty with spinach and avocado with strawberries and low fat string cheese

 Side view of the goodies

This one tasted a LOT better than it looks! haha. It's Tyson low fat buffalo chicken topped with spinach and avocado (of course ). mmmmm And cucumber slices served on the side! Yummy
This looks a lot better closed, but it really tasted delicious!
                                                                                 A Simple yet satisfying breakfast

Here's scrambeld egg whites and 1 large whole egg
with spinach and whole wheat bagel thin on the side
and served with blueberries!

This was SOO good ! You should try it!
My mom actually made this one today for lunch and she found it in Women's Health

Up close with all the goods

I had 2 small bowls and a side of strawberries

The recipe included:
8oz penne whole wheat pasta (boil)

melt 2 tsp smart balance butter
add 2 cups fresh chopped tomatoes
add 1 cup chopped red onion
1 tsp. dried italian dressing
1/2 tsp sald
1/4 tsp. pepper
cook until the mixture is saucy, about 5-6 minutes

Then add 1 can drained beans and the penne and cook through
Then remove from heat and add 4 cups chopped fresh greens (we used spinach!)
If desired, sprinkle with a little grated cheese

very simple and oh-so delicious ;-)

Besides food, I've been complaining a lot about the snow. I just can't deal with it anymore! I was shoveling outside today for an hour and let me just say, what a workout it was. It wasn't just light fluffy snow, it was heavy, slushy, wet snow. Plus,  the news said  that everything around Boston is going to freeze tonight around 6pm yikess. But sometimes, snow can be fun, especially playing in it! I guess I just have a love/hate relationship with the snow. But the following video is pretty cute,  it's my dadusin his snow blower and my 7 yr old nephew and 4 yr old niece attempting to dodge the snow!

looks like we got way too much snow huh? Well, this was the last snow stormabout a week ago! and the just keeps coming! Now I'm off to watch the Ghost Whisperer and relax on this cold day! :-)

SNOWWW.... and Spice Girls!

So I'm at school today (whyyyyyyyyyyyy?). The snow is awful today. So bad that my dad had to drive me to school since my car slides all over the place! I felt like I was in high school all over again, :-D. I wish I had my camera with me so I could show you all some pictures, but if you scroll down and see a previous post of snow pictures, it's similiar to that. yay? Snow days are super fun for the most part, except there isn't one today! So I'm really hoping they cut classes early or something. :-/ My first class, the professor showed up late and just as we were getting up to leave she came in and just had us sign attendance and then leave! :-) So now I'm catching up on my blogging that I haven't done in forever :-(

It really needs to be march asap so I can start running outside and training for WARRIOR DASH! :-) Soooo excited! If anyone hears of any other races coming up around the New England area, let me know! Since I got my new Dyad 6 running shoes, I now can't wait to get running outside! I don't get those awful shin splints anymore, horrayyyy :-)

& some exciting news, if I haven't mentioned before, I know ASL and I continue taking classes to keep learning and stay up to speed and all that fun stuff. Anyways, at the end of the semester, we always have to sign a song and it's a big performance and people come and the whole bit. Well, me and four other girls in the class decided to sign a song together and we're doing, Spice Girls :-D & I think we decided on the song Wannabe! And guess what? Yes, I am Ginger haha duhhhh. Red heads have to stick together! :-) Can't wait!

                                                         Brings back good memories :-D
